Banana Spice Bread
- Preheat oven at 350 degrees F and grease a standard bread dish
- Add ½ cup of organic butter and ½ cup of brown sugar in a bowl. Beat in 2 eggs, one after the other and add 4 mashed bananas and mix all the ingredients together.
- In a cup dissolve ½ tsp. baking soda with hot water and mix it with the banana mixture.
- In another bowl, you will need to mix together 1 cup of flour, 2 tsp. powder cinnamon, 2 tsp. baking powder, and 1/8 tsp. salt. Add the mixture to the banana mix and stir in 1 cup pecans. Stir until the mixture is moist.
- Pour the batter into the loaf dish and bake for 45 to 60 minutes. Take it out once it passes the knife test. And let it cool for 10 minutes and serve warm.

- This takes time so you will need to prep a night before, place cheesecloth in a strainer bowl and add 32-ounce yogurt. The yogurt will drain overnight and will thicken as it drains and by morning it will have turned to yogurt cheese.
- Now it’s time to transfer the yogurt cheese into a bowl and stir in honey and 3 cups of fresh and organic berries or fruit of your choice. Divide the servings and sprinkle the top with ground flax. Let it cool in the refrigerator and serve fresh.
